EVA was founded in Trento by Luca Girardi, Filippo Rigotti, Davide Saccardo, and Alessandro Bignardi. The four founders met at the Edmund Mach Foundation, where they earned degrees in Viticulture and Enology in 2020, before pursuing complementary paths across Europe and beyond, from nurseries and vineyards to wineries and academic research. Bringing this diverse experience back together, they founded EVA as a consulting practice built on direct, hands on knowledge of every stage of the wine production chain. Each partner contributes a distinct area of expertise, from project management and winemaking to production optimization and grapevine physiology, allowing the team to support clients across the full scope of viticulture and enology, from vineyard to bottle.
Luca Girardi
Project manager
His experience spans nurseries, vineyards, and wineries across Europe, including work in France, Switzerland, and northern Italy, where he developed a flexible, critical approach to the wine production chain. He holds an MSc in Sustainable and Precision Viticulture, with a thesis on yield estimation and computer vision. He continues to collaborate with academic institutions and companies on projects and trade fairs, building a strong professional network within the grapevine industry.
Filippo Rigotti
Winemaker
He combines a strong theoretical background in chemistry with hands on winery management experience. His work in France, Italy, and Tanzania spans small family run farms to industrial scale wineries, giving him a practical understanding of winemaking across very different scales and contexts. Within EVA, he focuses on translating this range of experience into tailored, context specific solutions for each client’s winery.scale wineries.
Davide Saccardo
Winemaker
He experienced across both established and emerging wine regions, from New Zealand to Azerbaijan. He specializes in production optimization, combining meticulous attention to detail with a practical, results driven approach. His work helps wineries improve efficiency, streamline operations, and consistently achieve high quality outcomes, drawing on proven solutions from diverse wine producing contexts.
Alessandro Bignardi
Viticulturist
Alessandro is completing a PhD in grapevine physiology, focused on bud regulation. He brings an analytical, data driven approach to viticulture, with a particular focus on data management and organization. His research experience includes work at the Irrigated Agriculture Research and Extension Center in Prosser, Washington (USA), where he contributed to international viticulture projects, grounding his consulting work in a rigorous, evidence based perspective.
